As to the steam condenser for brew kettle, we have two types for choose:
Our standard configuration is design the steam piping inside of room. The steam pipe install spray nozzle which directly connect with the tap water, so the spray nozzle can spray the water to condensate the steam. But also the steam will contact with the surface of pipe and the temperature is lower, the steam may liquidation and backflow the kettle tank, it will influence the wort. To anti backflow, there will welding a groove inside of the pipe and install extra small pipe to go through the kettle tank, then condensate liquid will drain out by small pipe.
Considering there will not produce much steam, we think it is OK for small capacity brewhouse.
Besides the condensate water can use for cleaning the tanks, but it can not for brewing due to lower sanitary level.
But for bigger capacity brewhouse, if local government do not have regulations for steam and steam will not influence the neighbors, we think it is better to consider directly drain the steam out which can greatly save city water consumption. Base on the configuration, the steam pipe directly connect with chimney to the roof and add extra T pipe to anti backflow.
