After mashing, we need to lauter the mash and get the wort. So, how to lauter the wort? There mainly has seven steps(this method is based on separated mash tun and lauter tun). 1. put into the hot water 2.pump the mash 3.stand 4.recycle the muddy wort 5..lauter the first wort 6.sparging 7.out spent grain.
Now, let’s specify these step.
Step1: put into the hot water
Before pumping the mash to the lauter tun, the lauter need to be checked first. Firstly, to make sure the false bottom is put right and tight. The rake is ready, the port, valve is in right state. After checking, put into the 78℃ hot water from the lauter tun bottom until the hot water level is same with the false bottom to expel the air between the false bottom and tank bottom, which is beneficial for avoid the wort oxidation, and preheat the false bottom and lauter tun. At the same time, the hot water could support the mash to make sure a smooth lauter process.
Step2: Pump the mash to lauter tun
Turn on the rake when pumping the mash to make the grain even. Or, the solute will be less and uneven. The time for pumping mash is better to be between 8-12mins. The pump speed at the beginning is better to be low, after the mash enter the lauter tun many, the speed could be normal.
Step3: Stand
After the mash enter into the lauter tun, the grain hull will settle down quickly. Then it will form 30-40cm thickness grain layer. After the stand over, there is mainly three lauter layer. Bottom layer(large and heavy grain particles), main layer(spent grain for lauter, the thickest layer), top layer(protein and light particles). On the top of the grain layer, there is first wort get together. So, the stand is very necessary. The stand process will keep around 10-20mins.
