Now, let’s continue to talk about the wort lauter process.
Step 4: Recycle the wort.
After standing for 10-20mins, the spent grain layer has been formed, then, we need to recycle the wort to get the clear wort. Open the beer drain outlet to drain the air in pipe and then close it. Then open the valve to transfer the wort to lauter tun again as the wort at beginning is very cloudy. Note: The recycled wort must back to the lauter tun under the wort level in case the recycled wort will destroy the spent grain layer and it could also decrease the oxidation degree. The recycle time is usually around 10mins until the wort is bright.
Step 5: Lauter the first wort.
The lauter time of first wort is around 75-105mins.
After the recycled wort is bright, open the inlet of kettle tun and let the wort in. In this stage, the rake could be open to help lose the spent grain layer. After 25-30mins, test the first wort concentration to decide the sparging water volume. For a right wort concentration, the first wort concentration need be higher around 40-80% than final concentration. Such as we need 12P beer, the first wort concentration is better to be 16-20P.
