The influence on equipment about cleaning agents and sterilization
The traditional equipment which made by carbon steel or other equipment with protect coating such as asphalt already gradually exit beer industrial. Now mostly are modern fermenting vessel made by stainless steel which include from brewhouse to fermenter、lauter, and filling with piping etc. So when choose cleaning agents and sterilization, there have two points need to notice:one is the nature of organic dirt, second is the equipment characteristic to be cleaned. Normally the cleaning agents and sterilization will erosion the stainless steel, especially when chloride existed which needs seriously attention. Therefor to choose cleaning agents and sterilization also need fully consider chemical characteristic. For example peracetic acid can corrosion rubber products, but it can divide in alcohol or water. Only trace exist and no harms.
The influence on stainless steel on cleaning agents and sterilization
(1)The influence on stainless steel about chloride
To increase the function of cleaning agents and sterilization, normally there has few chloride. Because the Chloride will corrosion the stainless steel, when use the products will corrosion the stainless steel, the type is pot corrosion and happens on crystal interface, also can not easy aware by people. For example the thin stainless steel easily perforation, nearly welding line piercing holes. After dealing with the stainless interface, it can shape about 3nm strong passivation film. But it can not work on chloride and have strong penetration, it is easy to corrosion the equipment.
(2)The influence on stainless steel about acid.
There has some limitation about stainless steel anti-corrosion, normally Austenite stainless steel has good corrosion resistance to organic acid or partial inorganic acid for example HON3 or HPO3. But for HCL and HSO4 without corrosion resistance just like carbon steel. Even to the stress corrosion result by chloride characteristic is lower than carbon steel.
(3)The influence to seal
The seal is made by elasticity and directly contact with beer. So the material has to reach the national standard, it can not have any ingredient to influence the beer taste.
