Generally the two stage plate heat exchanger composed by two paragraphs with one middle plate inside. (see picture as below)
The first stage cooling with city water, the second stage cooling with coolant, such as glycol or alcoholic. The city water for the first stage better below 20℃, then the wort could be cooled to 40-50℃ before it goes to the second stage. The coolant of the second stage at about -3~-4℃ , then the wort will be cooled to fermentation temperature. The water in the first stage could be recycled as brewing water after heat exchanging.
The plate heat exchanger with resistance at about 0.25-0.35Mpa,so the wort and coolant need to be pressed inside with pump. It cooling the 90-95℃ wort out from the whirlpool into fermentation temperatures. The cooling time better within 50min.
When the wort cooling is over, the heat exchanger must be cleaned and sterilized by full cycling of hot water and caustic water, to incase the scale formation.
