The customers always complain some beer has uncomfortable bitterness in beer, characterized not fine mouthfeel, rough bitterness. What causes these problems? Ingredients and brewing technology.
1.Ingredients A.The content of basicity, hardness, Ca, Mg, Mn and CO2 is too high in brewing water.
B.The hop quality is too bad. The hop after long time storing has been aged or the hop origin is not good.
C.The malt quality is too bad. For example, the malt hull is rough and consists of much protein etc. or the roasting temperature is too high(roast malt).
2.Brewing technology A.Mashing technology. The time of mashing and lautering too high, so excess fatty acids etc enter the wort; the wort after lautering is not clear; the wort is oxidized heavily during mixing etc; use the last sparging water when next mashing.
B.Fermenting and maturing technology. The hot break and cold break is not be separated well; the tubing is mouldy; the temperature of maturation is too high and many yeast goes into maturation tank; much higher alcohol and lipid are generated during fermenting.
