The target for separating the hot break in the whirlpool tun is that: Wort turbidity less than 10EBC; the solid particle in wort less than 25mg/L. And something should be noted if we want to reach this target.
1.The time of the wort under heating Better be shorter. The total time started from boil over to the wort being pumped into whirlpool tun, and until the settling is over cannot exceed 60min.
2.The transportation of the wort
(1). The transferring should be stable and soft, better avoid cavitation, or the trub will be broken.
(2). The speed during transportation cannot be too fast, better less than 5m/s. Generally a slow speed is enough to form a good whirlpooling inside.
(3). The pump should be closed as soon as all of the wort being transferred into the whirlpool tun. For avoid the air going into the tank.
3.The pump-out of the wort Generally the wort need to be settled about 20-40min, cannot less than 20min. Then the wort should being pumped out from the highest port. When the wort level close to the top of the trub, the pump speed should be modulated slower. Better lower than the speed of the wort goes out from the trub. It will better avoid the broken of trub.
4.The secondary liquidity of the wort The wort speed at the inlet better within 3.5~5m/s.
If the hot bream with bigger solid particle, a baffle plate could be installed near the outlet.
