After the beer finish the primary fermenting process, we need to transfer green beer to sterile storage tank to conduct the secondary fermentation process. The transferring time should be 1-3days.
The ideal transferring method is getting rid of air inside tank by water first, then discharge the water by co2 to avoid the beer touch oxygen and act.
After green beer entered into the bbt, the 10-15cm top space should be left as it is convenient to expel the air above the beer level. If the content of the remained sugar is too low to conduct the secondary fermentation, we need to add 10~20% high bubble wine( around 20% fermentation degree). So, we need to remain the space for high bubble wine in advance when we deliver beer to bbt. After 2-3days’ top fermentation, we should add the high bubble wine and then seal the tank to conduct the secondary fermentation.
There is two method to acquire the power for delivery. 1.We could use the nature gravity by make the tank in different level.2. By pump motor, but the pump need to be sterile.
