What’s the reason of beer have different savor, how to solve it?
The reason of beer have different savor can be summarized as three aspects:
Aspect 1: The material (raw material、water、yeast etc.)quality and ingredients contained happens physically、chemical and biochemistry changes in the process of beer producing are main reason that influence the bee taste.
For example:
The barely hull is thick、hops、high barely polyphenol contents、use excessive oxidation hops for long time、the PH of water also is high,all can cause the beer taste cuse. So we need to choose barely with thin hull and adopt the thchnology of mashing by barely hull seperate,adjust PH,don’t use obsolete
Aspect 2: The facilitates in the process of beer producing,especially the facilitates (the structure of facilitates、material、the automation level)directly touch with the materials. They are also important factor can influence the beer taste.
For example:
The vessel、pipes、valves、tools is iron and not notice to clean ususlly can result in have iron smell.So we need adopt stainless steel、copper etc.
The facilitates have dead corner,the pipes and valves improper installation cause pollution and mildew, so any vessel should have round corner and desigh union for easy detachable、clean.
Aspect 3: The method、conditions、operation is not suitable in the process of beer producing also cause beer slavor. We should strictly adopt operate and measure to solve it.
For example:
The yeast added is too high、yeast aging、high temperature for beer fermentation and storage,cold coagulum not good seperate can cause yeasty. Actually the contents of yeast won’t over than 1% and not use for more than 8 generations, the temperatue for fermentatin not over 12℃ and for storage not over 4℃.
