The brewmaster usually consider many factors in the actual process of beer brewing, for brewing good quality beer,
they choose the configuration can meet himself demands.
For example MLWT+KT
There might three factors can cause have such configuration:
Factor 1: The brewmaster consider filter the wort by nature/gravity, then the sprent grain can leave at filter
and the wort can go into the whirlpool by it's Gravity. So they separate the whirlpool under the mash&lauter tun.
Now most brewries use the pump to recycle the wort thus help with the lauter.
Factor 2: For the configuration MLT+KWT(Mash&Lauter tank+Kettle&whirlpool tank),
strictly brewmaster think if adopt electric heating method, the electric tube will effect the whirlpool.
So they also seperate whirlpool tank under mash&lauter tank. But the effect for the whirlpool is small.
Based on the reason (2), according to the configuration MLWT+KT, the whirlpool tank can by the way be used as wort storage tank, but the operate is a little complicated.
Factor 3: Usually in a brewpub have a hot liquor tank is a good news.
But for save the cost, with the such confiauration MLWT+KT,the kettle tank can also be used as a hot liquor tank
and wort can storage at whirlpool tank.So then we can sparging.
