Most breweries prefer to use steam or hot water to sterilize.
Steam sterilization need to keep 15-20min at 100 clesuis. But steam sterilization is easy to cause vacuum. So 40 celsuis Chemical or physical cold sterilization is becoming more and more popular in big tank sterilization.
Chemical cold sterilization includes Alkaline Chemical sterilant and Acid Chemical sterilant.
Alkaline Chemical sterilant main components is chlorine(pypocholoride). The main pypocholoride includes sodium hypochlorite, chlorine dioxide.
50-100mg/kg active chlorine solution is suggested as this concentration have a lower corrosive effective.
sodium hypochlorite normally have 10-15% active chlorine solution, it has corrosion to stainless steel, aluminum and tin. According to study, SS304(inconel) cannot contact with 0.3% pypocholoride over 4h, or it will cause corrosion.
For 316L(inconel with Mo) have a resistance to the liquor with lower 10% pypocholoride.
While Common Acid Chemical sterilant includes hydrogen peroxide(>30ppm H2O2
), acetic acid, peracetic acid and >0.3% HNO3 solution
